What Is The Appropriate Way to Call a Waiter in English?

When we call a waiter at restaurants in Japan, we just say with raising your hand slightly, "Excuse me"
We've never called the server's name.
What is the appropriate way to call a waiter in English, "Excuse me, sir or ma'am","Excuse me, waiter" ?
Is there any differences between the fancy restaurants and the casual ones?
英語でウエイターを呼ぶときには、どのように言えばいいのでしょうか?sir とかma'am もしくはウエイター、どれが適切ですか?
