Questions about talking to foreigners

1.Is it important to speak the right grammar while talking to English native speakers? (such as the present time, past or have/has)

2.Can I use"I want" rather than "I'd like to" while asking for help?
coz in chinese,two of them all mean"想要" is it polite to say like that?

3.if a person asks you "How are you", do you need to ask him/her "How about you"
in return?? coz most of the textbooks in Taiwan always say
A: How are you?
B: I am fine, thank you. And you?

I wonder if it is right or wrong for a long time....
