Mysterious Roses
There has been a rose tree in my garden since long time ago. A few years ago, I noticed that it has flowers in some different colors. Some of them are yellow, some of them are red, and the others are mixed color of those.
I thought my parents had grafted two different rose trees, because I couldn’t believe that there was a rose tree that had two or more different colors of flowers.
However, a few months ago, I came across a picture of the same flower on the Internet. It said the name of the rose was Anne Frank, which was obviously named after the famous Jewish girl.
Then I googled it and found an article mentioning colors of it. It says the flowers of Anne Frank change their colors. I was surprised.
I wanted to check and see if the flower really changes its color.
When the blossom season came, I started to take a photo of it.
First, I took a picture of one of the flowers. A few days later, I tried to take another picture of it. However, I was at a loss. I couldn’t find the very flower that I’d chosen, because the number of flowers had increased dramatically. It wasn’t as easy as I had expected.
Then I tied a straw around the stem just under a flower that had just started to bloom so that I would be able to distinguish the flower properly. The flower was so pretty with yellow fringed with pale red. (See the first picture.)
Only a day later, I checked the flower and was really surprised. It was already big and almost all yellow. (See the second picture.) I could hardly believe, so I had to confirm the straw several times.
One more day passed. I saw the flower red! (See the third picture.) Could I believe it? However, it was true.
I didn’t expect it to change so quickly and dramatically. I was surprised and amazed. Anne Frank does change colors of its flowers.

最初に、私は一つの花の写真を撮りました。数日後、私は同じ花の写真をまた撮ろうとしました。しかし、困ってしまいました。私が選んだあの花がどれだかわからなくなってしまったのです。花の数が劇的に増えていたからです。調査は思ったほど簡単ではありませんでした。
そこで、今度はちょうど咲きはじめた一つの花のすぐ下の茎にわらを巻きつけておきました。そうすれば、印になってその花をちゃんと見つけられるからです。 それは薄い赤で縁取られた黄色で、とても可愛い花でした。(一枚目の写真をご覧ください)
たった一日後、私はその花を調べて、ほんとうに驚きました。それはすでに大きく、ほとんど黄色一色になっていたのです。(二枚目の写真をご覧ください) 私はなかなか信じられず、何度も印のわらを確かめました。

When the blossom season came, I started to take a photos of it/them. [Alternative: I started taking photos of it/them.
You were planning on taking many photos, right? Else "started" wouldn't make sense. "Take a photo" means take one and only one photo. You should use "it" if all of your photos are of exactly the same flower; otherwise you should use "them" to indicate that you are taking photos of several flowers, even if they are all the same type of flower.
I couldn’t be sure which flower I’d chosen originally, because the number of flowers had increased dramatically.

Anne Frank flowers do change (their) colors.
Very good use of "do/does" for emphasis. However, it is a bit unnatural to use "Anne Frank" as the name of the plant rather than as the name of the flower.

You can ask other people "Can you believe it?" or say something like "How could I believe..?" (ex: "How could I believe that there is a flower that changes colors so quickly?"), but "Could I believe it?" sounds very awkward to me.
