I usually cook fermented rice after getting back from Japan. I used to eat this kind of rice at my family's house. My mom has a special pressure cooker to make it. I didn't have mine. But I finally got a new pressure cooker in Japan and can now make it. A method of fermented rice is complicated a bit. However, the rice is just composed brown rice and salt, small red beans. One of unique points is when I wash the rice and the red beans, I have to mix clockwise with a whisk. The method is based on an idea of right & left rotation. It comes from a Japanese traditional. I also have to control the heat when I'm cooking on a stove.
