"们" can only be used for living things like "人们", or “动物们”. And since you are thinking about the hotels rather than actually being there, it's better you use 那些（those）instead of 这些(these).
我想念在中国的日子！

西安饭店means Xian hotel. 西安的饭店means "the hotel in Xian"
今天我记得在想起了中国的饭店们。

In Chinese,we won't add"们"after the things that do not have real lives.
For example,we can say"这些同学们很可爱。"，and we can only say "这些玩具很好玩儿。（there is no 们 here）".Actually,we can also omit "们" when we refer to the
alive things.So we can just say"这些同学很可爱。"instead of"这些同学们很可爱。"
