This sentence is saying that by having french fries once you are not going to develop obesity or heart disease, these are caused by eating habits (what you eat regularly) that are developed over a long period of time.
Does that help?
This sentence has many "because" and "but," so I really do not know what is that it means?
Obesity and heart disease do not develop because of one order of french fries but because of an established pattern of poor eating habits. "Because means 'for the reason that'" while "but" makes a contradiction. So, obesity and heart disease do NOT develop by reason of a single order of fries, BUT (read: however setting up a contrary statement) for the reason of an established pattern of poor eating habits.
English can be complicated sometimes. Here's a hint: When you see words like "because" or "but," only read the part of the phrase to which they relate. So here, you would read 1) obesity and heart disease do not develop because of one order of french fries; and 2) BUT because of an established pattern of poor eating habits. "Because" = reason -- "but" makes a contrary statement about the prior phrase (that is, NOT the previously stated reason).
It is good you wrote an entry about this confusion.
