Bryan's daughter is going to Paris.
Bryan finds a map of Europe in the trunk.
Some dates and travel plans are written in the map of Europe.
Bryan thought that his daughter's supposed to stay only in Paris.

I'm guessing he's showing her the map and asking, "What is this?". So when she answers, she's telling him what "it" is (a list of tour dates). So it's fine like that.

"It" doesn't refer to the dates. "It" in this case refers to the map containing the dates and travel plans. You are correct that "it" wouldn't refer to "dates". If he was questioning just the dates the conversation would go like this:
Bryan: "What are these?"
His wife: "They are U2's European tour dates." or "These are U2's European tour dates."

Finding a map in "the" trunk doesn't make the connection. I assume the connection is to his daughter, which requires that you identify the trunk as "her" trunk.
