An elderly woman brought a big bag of rusks to the meeting today.
Since she said they were handmade, I asked her whether it was hard to make them.
She said with a smile, "It's not so hard. I bought some bags of rolls with half price
yesterday, because they were on the sell-by date.
I just cut and spread some peanut butter on them.
After that, I just baked them.
It's simple and easy."
They were delicious and one of kids seemed really like them.
I was impressed with seniors' wisdom.

If you are referring specifically to that person, which the use of the past tense "was" seems to indicate, then use the singular form of "senior": "I was impressed with the senior's wisdom."
But if you are making a statement about seniors in general, then it's better to use the present tense: "I am impressed by seniors' wisdom."
Why is the preposition changed into "by"?
