Hi, my friends!
I'm translating menus for Japanese Soba restaurant.
Please check following lines and correct them if it doesn't sound natural.
I would appreciate your corrections!

Carefully made Ni-hachi (two-eight) soba noodle made from buckwheat flour grown in Horokanai, Hokkaido.
You can enjoy soba with a dipping sauce and some condiments (wasabi and finely chopped raw Welsh onion which were immersed in ice water for a while).
Soup stock for the dipping sauce is made from bonito flakes and only first soup is used.
It is our most basic soba with superb flavor and resiliency.

Yes, first soup is a cooking term.
We call it 「いちばん だし」in Japanese.
いちばん(first) だし(soup)
When you make soup stock from bonito flakes, you can use the bonito flakes two or three times not only once.
The soup which was taken first time is called "first soup".
Naturally the soup which was taken second time is called "second soup (にばん だし)".
I hope my description makes sense!!
