What Are the Meanings of Those Sentences Exactly?

While I was trying to translate Japanese lyrics into English, I was at a loss about how I should have taken meanings of some basic English sentences.
They are incredible basic questions, but the more I think their meanings, the more I’m getting confused.

“I don’t know everything about you.” means that I know a lot of things about you, but there are a few things that I don’t know about you, doesn’t it?
On the other hand, “I don’t know anything about you.” means that I know you, but I know nothing about you or there is nothing I know about you, doesn’t it?
“I don’t know you.” means that I’ve never seen you before, so we are totally strangers, doesn’t it?

I’d appreciate if you could explain them to me.
