Hi
I found a sentence in my text book, which is "Do you think if it is possible?".
I thought it is weird. I think it should be "Do you think it is possible?".
Thank you for reading. Please leave a comment :p

I thought it was weird.
I think you are correct.

同感! The only way I can think of to have a sentence like that is something like this:
"Do you think, if it is possible, I could maybe stay here tonight?".
In that sentence both "if it is possible" and "maybe" are used to soften the request, but in your original sentence the "if" doesn't make sense.
"Do you think if it is possible?" "Yes. I think if it is possible." ...lol
Can I stay here tonight?
今夜、泊まっていい?
Do you think, if it is possible, I could maybe stay here tonight?
今夜、もしよかったら、こちらにお泊りしていただけませんか?
敬語は苦手だけど、この感じかな?
